Preparation

Toss the chicken in the buffalo sauce. Using a peeler, peel one carrot and then after discarding outside peels, continue to peel until you have reached the end of the carrot. Use these skinny strips as your carrot for the wrap. Lay the chicken, baby spinach and carrot strips on the wrap and roll it up. Pack it in a sandwich container and serve at lunch. *Alternatively, if you'd prefer a warm chicken wrap, pack your spinach and carrots in a container and pack the heated chicken in a pre-warmed thermos. Assemble the wrap when it is time for lunch. Enjoy.
